What are all the differences between Version 1 and Version 2 , exactly?
Also what is the latest version of Android, that is available, that each version support updating to?

Plus v1 runs Android 5, v2 runs Android 6. They have no updates above this version of OS.

So why cannot V1 run Android 6 ?, (whats the difference?)

The Plus v1 is a different processor, S812 , while the v2 is S905. The processor manufacturers have not released the necessary dev kit for Android to be updated to a later OS.

I can see many generic Android boxes that use the S905 processor (as the version 2) advertised with Android 7.x. Why does Version 2 not therefore have a Android 7.1 update ? - (the processor manufacturers must therefore have released the necessary development kit for Android 7.x)

The boxes you have seen are likely running the S905X processor or variant rather than the base S905 processor.

As far as I am aware - and I have researched this - the freaktabs site has lots of information - it is not possible.

Attached is a .PDF file from the page of the droidbox website, showing specifications. It happens to state Amlogic S905X processor, at 1.5GHz ?

I am not going to argue with you anymore.
The comparison table you have copied is clearly in error.
For the avoidance of doubt the t8s plus v2 has an amlogic s905 processor clocked at 2.0ghz.
Here is an extract from the originsl spec sheet.
