I recently bought this and it’s fantastic!
My only problem so far is (I’m not good with pc or how to really use this software apart from playing the games) I got a wireless controller and it has analogue sticks and rumble, the rumble works on ps1 games but the sticks don’t? I could not purchase an R1 controller from this site as they are sold out so I bought x-box 360 type one on Amazon for £24. Does anyone know how to tell me an idiot proof way of how to get the analog sticks working on the games for Nintendo 64 Dreamcast etc?

By default they may not be set up for other controllers. What you can do is while playing a N64 game for example, is to press the HOTKEY+Y (our controllers are SELECT for hotkey) and this will bring up the RetoCore menus. From here you can change the controller settings for the emulator and can set up the controllers specific to it. Remember to save the configuration before exiting the menus. There is an overview of this at https://retropie.org.uk/docs/RetroArch-Configuration/ .
